Ever since he was a very young creature, Yuki's mum used to make pancakes for him every Saturday morning. She would get up early, gather all the ingredients in the nearby insect village, go and bake pancakes and wake Yuki up. When Yuki got older, his mum taught him how to make her delicious pancakes recipe. He has written it down below for you so you can make them too. Have fun cooking!
250 g flour
2 eggs
500 ml milk
1 pinch of salt
1 tablespoon of sugar (optional, for sweet pancakes)
1 teaspoon vanilla extract (optional, for extra flavour)
Butter or oil for frying
Sift the flour into a large bowl. Add the salt and sugar (if making sweet pancakes) and mix well.
Make a well in the centre of the flour and break the eggs into it. Add about half the milk and start mixing with a whisk or mixer, working from the centre outwards to avoid lumps. Gradually add the rest of the milk and keep mixing until you have a smooth batter. Add the vanilla extract if using.
Let the batter rest for about 15-30 minutes. This makes for nice fluffy pancakes.
Heat a little butter or oil in a frying pan over medium-high heat. Pour a small ladleful of batter into the pan and swirl the pan around to distribute the batter evenly. Fry the pancake for about 1-2 minutes on each side, or until golden brown. Repeat this process with the rest of the batter, adding more butter or oil to the pan if necessary.
Serve the pancakes hot with your favourite toppings, such as syrup, icing sugar, fresh fruit, whipped cream, Nutella, or whatever you like.
Additional tips from Yuki:
For thicker pancakes, use a little less milk.
For extra fluffy pancakes, add a teaspoon of baking powder to the batter.
Experiment with additions such as blueberries, chocolate chips or banana slices in the batter for variety.
